Truth About Carbohydrates

Carbohydrates (carbs) are often misunderstood, many blame them for weight gain, diabetes, and “sugar problems.” But the truth is more nuanced. Not all carbs are the same, and much of the fear around them comes from confusion between refined, processed carbs and whole, natural carbohydrate‑rich foods. Looking at Scripture, prophetic counsel, and modern research (including insights from the China Study), we can understand how carbs truly fit into God’s design for health.

1. Carbs in God’s Design

From Eden onward, God provided plant‑based foods rich in carbohydrates: grains, fruits, vegetables — designed to be our primary sustenance.

“

And God said, Behold, I have given you every herb bearing seed … and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for food.

”
Genesis 1:29bible

These foods are naturally rich in complex carbohydrates and fiber, giving us energy, building blocks for health, and supporting our bodies without the downsides of refined “empty” carbs.

2. Why Carbs Have a Tarnished Reputation

The problem isn’t carbs themselves; it’s refined carbohydrates: white flour, sugary drinks, processed snacks — that are often overconsumed. These cause rapid blood sugar spikes, insulin resistance, inflammation, and long‑term health risk.

“

Refined carbs may increase blood-triglycerides, blood sugar levels and cause insulin resistance … major risk factors for heart disease and type 2 diabetes.

Research also shows that high intake of refined carbohydrates is associated with increased risk of coronary heart disease.

3. What the China Study and Related Research Teach Us

While the China–Cornell–Oxford Project (the “China Study”) was not focused exclusively on carbs, it provides key insights into how a plant‑based lifestyle, rich in natural carbohydrates, correlates with health.

In populations eating primarily plant‑based diets, chronic diseases associated with “Western‑style” diets (often heavy in refined carbs, animal protein, and fat) were significantly lower.

4. Quality Over Quantity: The Science of Carbohydrate Quality

Recent research makes a clear distinction between high‑quality carbohydrates (whole grains, legumes, fruits, vegetables) and low‑quality (refined, processed). The quality of carbs has strong implications for long‑term health.

“

Higher intake of high-quality carbohydrates (whole grains, legumes, fruits, vegetables) and fiber was associated with greater “healthy aging,” while refined carbs were linked with worse outcomes.

Overconsumption of poor-quality carbohydrates is associated with metabolic disease, inflammation, gut dysbiosis, and even negative effects on mental health.

5. Spirit of Prophecy Guidance on Carbs

Ellen G. White spoke favorably about diets rich in grains, fruits, and vegetables essentially carbohydrate‑rich, whole plant foods — warning against indulgence in processed or fleshy foods.

“

Grains, fruits, nuts, and vegetables constitute the diet chosen for us by our Creator … These foods … are the most healthful and nourishing.

”

By emphasizing plant‑based food, she reinforced that simple, naturally carbohydrate‑rich foods are not just acceptable — they are ideal.

6. Why Refined Carbs Are Especially Harmful

Several mechanisms explain why refined carbs are particularly damaging:

  • They spike blood sugar and insulin, promoting insulin resistance
  • Frequent consumption contributes to systemic inflammation
  • High glycemic load foods may stress the body’s metabolic systems and raise risk of heart disease
  • Over time, they can negatively affect brain function and promote “overfat” conditions

7. Reclaiming Carbs the Right Way

If carbs have gotten a bad reputation, here’s how to restore them rightly in a way that supports health, honors God’s design, and aligns with prophetic counsel:

  • Choose whole grains (brown rice, oats, quinoa), legumes, fruits, and vegetables
  • Minimize refined grains and processed starches (white bread, pastries, sugary snacks)
  • Balance your plate with other macronutrients: healthy proteins and fats, without demonizing carbs
  • Be mindful of portion sizes, especially with high‑glycemic foods, and pair them with fiber or protein to reduce blood sugar spikes
  • Trust in God’s original design: natural, plant‑based foods were meant to nourish us, not worsen our health

Carbohydrates are not the enemy, poor‑quality carbohydrates are. The real issue lies not in carbs themselves, but in the refined, processed forms that flood modern diets. Science, Scripture, and the Spirit of Prophecy all agree: returning to whole, plant‑based carbohydrate sources supports health, longevity, and God‑honoring living.

Let us reclaim carbs in their true, God‑given form as a foundation of health, energy, and life.
